It started in Union Hall, 2003. Two small stills and a belief that things could be done properly. Today, the stills are in Skibbereen, but the hands at the helm haven’t changed.

Every day, the barley arrives from Irish farms — 18 tons at a time, shaped by the people who know this land best. From the edge of Ireland to the world: we don’t chase trends. We build relationships that last.

We don’t buy our stills; we build them. From our own hands came ‘The Rocket’ — a rapid distillation process designed for one thing: a cleaner, smoother whiskey.

Chemistry, not guesswork.

Out here, we use what others don’t. Gas chromatography. We apply the rigours of science to the art of the cask – because when you understand the molecules, you can be confident in the flavour.

The Atlantic does its work.

Casks sit on the coast. Wind, sun and sea-fret are the silent partners in every bottle. We don’t hide it. We don’t try to control it.

The whiskey comes out tasting of where it came from.

That’s the point.

100% of the grain we use is Irish grown, sourced from farmers local to our home in West Cork. It is where our whiskey story begins — rooted in the land, shaped by tradition, and crafted with care.
