The Whiskey

On waiting

Linda O’Sullivan

Linda O'Sullivan — Queen of Crookhaven

“You can't hurry a cask, but you can listen to it.”

Linda’s story begins at the river’s edge in Skibbereen, where the work of distilling meets the rhythm of a place that has always taken its time. Twenty-one years on, the same patience runs through every cask.

What follows is a conversation about craft — the cooperage, the warehouse, the long view. We talked over a glass of single-malt, in the warehouse where the air smells of toasted oak and sea salt. The transcript below has been lightly edited for length and clarity.

100% of the grain we use is Irish grown, sourced from farmers local to our home in West Cork. It is where our whiskey story begins — rooted in the land, shaped by tradition, and crafted with care.
